For milk, the number to aim for is around 60–65°C: hot enough to be properly hot in the cup, cool enough that the milk stays sweet rather than scalded. A long-stem thermometer suits 600ml and larger jugs; a short stem is better for a 350ml jug where a long probe hits the base.
